Ingredients

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
  • 4 cups beef or vegetable broth
  • 250g (8 oz) pasta (fettuccine or spaghetti)
  • 1 tablespoon balsamic vinegar
  • 1 cup shredded Gruyère or mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (optional)


Instructions

  1. In a large pot, heat butter and olive oil over medium heat.
  2. Add sliced onions and cook slowly, stirring often, until deeply caramelized (about 20–25 minutes).
  3. Stir in garlic, sugar, salt, pepper, and thyme; cook for 1–2 minutes until fragrant.
  4. Pour in the broth and bring to a boil.
  5. Add pasta, ensuring it is submerged in the liquid.
  6. Reduce heat to medium-low and simmer, stirring occasionally, until pasta is tender and liquid is mostly absorbed (about 10–12 minutes).
  7. Stir in balsamic vinegar and half of the cheese until melted.
  8. Sprinkle remaining cheese on top, cover, and let sit for 2–3 minutes until melted.
  9. Garnish with parsley if desired and serve warm.
