Ingredients
- 200g digestive biscuits, crushed
- 100g melted butter
- 250g cream cheese, softened
- 1/2 cup fresh lemon juice
- 1 tbsp lemon zest
- 1/2 cup sweetened condensed milk
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup whipped cream or whipped topping
Instructions
- Mix crushed biscuits with melted butter until well combined.
- Press the mixture firmly into the bottom of a lined baking pan to form the crust.
- Refrigerate the crust for 20–30 minutes until firm.
- In a bowl, beat cream cheese until smooth.
- Add lemon juice, lemon zest, condensed milk, powdered sugar, and vanilla extract. Mix until creamy.
- Fold in the whipped cream gently until well incorporated.
- Pour the lemon filling over the chilled crust and spread evenly.
- Refrigerate for at least 4 hours or until set.
- Slice into bars and serve chilled.
