Description

Ingredients

  • 200g digestive biscuits, crushed
  • 100g melted butter
  • 250g cream cheese, softened
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1/2 cup sweetened condensed milk
  • 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream or whipped topping


Instructions

  1. Mix crushed biscuits with melted butter until well combined.
  2. Press the mixture firmly into the bottom of a lined baking pan to form the crust.
  3. Refrigerate the crust for 20–30 minutes until firm.
  4. In a bowl, beat cream cheese until smooth.
  5. Add lemon juice, lemon zest, condensed milk, powdered sugar, and vanilla extract. Mix until creamy.
  6. Fold in the whipped cream gently until well incorporated.
  7. Pour the lemon filling over the chilled crust and spread evenly.
  8. Refrigerate for at least 4 hours or until set.
  9. Slice into bars and serve chilled.
