Description

A rich and comforting creamy chicken pasta made with tender chicken, a silky cream sauce, and perfectly cooked pasta.


Ingredients

  • 250g pasta (penne or fettuccine)
  • 2 chicken breasts, sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian herbs
  • Salt and black pepper to taste
  • 1/2 cup mushrooms (optional)
  • 2 tbsp butter
  • Fresh parsley for garnish


Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a pan over medium heat. Add chicken slices, season with salt and pepper, and cook until golden and fully cooked. Remove and set aside.
  3. In the same pan, melt butter and sauté onion and garlic until soft and fragrant.
  4. Add mushrooms (if using) and cook until tender.
  5. Pour in chicken broth and heavy cream, stirring to combine. Let simmer for 5 minutes.
  6. Stir in Parmesan cheese and Italian herbs until the sauce thickens.
  7. Return cooked chicken to the pan and mix well.
  8. Add cooked pasta and toss until fully coated in the creamy sauce.
  9. Adjust seasoning if needed and cook for another 2–3 minutes.
  10. Garnish with fresh parsley and serve hot.

Notes

  • Use freshly grated Parmesan for better flavor and texture.
  • Add spinach or broccoli for extra nutrition.
  • Do not overcook the chicken to keep it tender.
  • Reserve some pasta water to adjust sauce consistency if needed.
