Ingredients

- 4 slices of bread (sourdough or white)
- 2 tbsp butter, softened
- 1 cup shredded cheddar or mozzarella cheese
Instructions
- Prepare the Soup: Heat olive oil in a medium saucepan over medium heat. Add chopped onion and sauté for 3–4 minutes until softened. Stir in garlic and cook for another 30 seconds until fragrant.
- Add crushed tomatoes, broth, basil, sugar, salt, and pepper. Bring to a simmer and cook for 10–15 minutes to let the flavors blend.
- Use an immersion blender (or transfer to a blender) to purée the soup until smooth.
- Return soup to the pot, stir in the cream, and heat gently without boiling. Adjust seasoning to taste.
- Make the Grilled Cheesy Toast: Butter one side of each bread slice. Place two slices, buttered side down, in a skillet over medium heat. Sprinkle cheese evenly on top, then cover with the other slices, buttered side up.
- Cook for 2–3 minutes per side until golden brown and cheese is melted. Slice diagonally.
