Description

The Best Fudgy Chewy Brookies combine the gooey richness of brownies with the buttery chew of chocolate chip cookies — all in one decadent treat with a crisp edge and soft, fudgy center.


Ingredients

  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 cup (100g) brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (90g) chocolate chips
  • 1/4 cup (30g) unsweetened cocoa powder
  • 2 tbsp melted dark chocolate (optional for extra fudgy texture)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth and combined.
  3. Add the egg and vanilla extract, whisking until glossy and thick.
  4. Sift in the flour, baking soda, and salt, then mix until just combined.
  5. Divide the dough in half: add cocoa powder (and melted chocolate, if using) to one half to make the brownie portion.
  6. Fold chocolate chips into the cookie dough half.
  7. Scoop 1 tablespoon of cookie dough and 1 tablespoon of brownie dough, press them gently together, and roll into a ball.
  8. Place dough balls on the prepared baking sheet, leaving about 2 inches apart.
  9. Bake for 10–12 minutes or until the edges are set but the centers are still soft.
  10. Allow to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For extra chewy cookies, slightly underbake and let them finish setting on the baking sheet.
  • Chill dough for 30 minutes before baking for thicker brookies.
  • Store in an airtight container for up to 5 days or freeze for longer storage.
  • Add a pinch of espresso powder to the brownie dough to enhance the chocolate flavor.
