The Best Fudgy Chewy Brookies combine the gooey richness of brownies with the buttery chew of chocolate chip cookies — all in one decadent treat with a crisp edge and soft, fudgy center.
Ingredients
- 1/2 cup (115g) unsalted butter, melted
- 1/2 cup (100g) brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup (125g) all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (90g) chocolate chips
- 1/4 cup (30g) unsweetened cocoa powder
- 2 tbsp melted dark chocolate (optional for extra fudgy texture)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth and combined.
- Add the egg and vanilla extract, whisking until glossy and thick.
- Sift in the flour, baking soda, and salt, then mix until just combined.
- Divide the dough in half: add cocoa powder (and melted chocolate, if using) to one half to make the brownie portion.
- Fold chocolate chips into the cookie dough half.
- Scoop 1 tablespoon of cookie dough and 1 tablespoon of brownie dough, press them gently together, and roll into a ball.
- Place dough balls on the prepared baking sheet, leaving about 2 inches apart.
- Bake for 10–12 minutes or until the edges are set but the centers are still soft.
- Allow to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For extra chewy cookies, slightly underbake and let them finish setting on the baking sheet.
- Chill dough for 30 minutes before baking for thicker brookies.
- Store in an airtight container for up to 5 days or freeze for longer storage.
- Add a pinch of espresso powder to the brownie dough to enhance the chocolate flavor.
