Description
Juicy grilled chicken breasts smothered with sautéed mushrooms, onions, and melted Monterey Jack cheese, inspired by the famous Texas Roadhouse favorite. A hearty and flavorful main dish perfect for family dinners.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tsp salt
- 1 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 2 tbsp olive oil
- 1 tbsp unsalted butter
- 1 cup sliced mushrooms
- 1/2 cup sliced onions
- 1 1/2 cups shredded Monterey Jack cheese
- 1 tbsp chopped fresh parsley (optional)
Instructions
- Season chicken breasts with salt, pepper, paprika, and garlic powder.
- Heat olive oil in a skillet or grill pan over medium heat.
- Cook chicken 6-7 minutes per side until internal temperature reaches 165°F (74°C). Remove and keep warm.
- In the same skillet, melt butter and sauté mushrooms and onions until soft and lightly caramelized.
- Place chicken back into the skillet and top each piece with sautéed mushrooms and onions.
- Sprinkle shredded Monterey Jack cheese evenly over the top.
- Cover skillet and cook on low heat until cheese is melted.
- Garnish with parsley and serve hot.
Notes
- Pound chicken evenly for uniform cooking.
- Use provolone or mozzarella if Monterey Jack is unavailable.
- Serve with mashed potatoes or steamed vegetables.
- Store leftovers refrigerated for up to 3 days.
