Description

Juicy grilled chicken breasts smothered with sautéed mushrooms, onions, and melted Monterey Jack cheese, inspired by the famous Texas Roadhouse favorite. A hearty and flavorful main dish perfect for family dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 cup sliced mushrooms
  • 1/2 cup sliced onions
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1 tbsp chopped fresh parsley (optional)


Instructions

  1. Season chicken breasts with salt, pepper, paprika, and garlic powder.
  2. Heat olive oil in a skillet or grill pan over medium heat.
  3. Cook chicken 6-7 minutes per side until internal temperature reaches 165°F (74°C). Remove and keep warm.
  4. In the same skillet, melt butter and sauté mushrooms and onions until soft and lightly caramelized.
  5. Place chicken back into the skillet and top each piece with sautéed mushrooms and onions.
  6. Sprinkle shredded Monterey Jack cheese evenly over the top.
  7. Cover skillet and cook on low heat until cheese is melted.
  8. Garnish with parsley and serve hot.

  • Pound chicken evenly for uniform cooking.
  • Use provolone or mozzarella if Monterey Jack is unavailable.
  • Serve with mashed potatoes or steamed vegetables.
