Ingredients
- 2 cups cooked shredded chicken
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt to taste
- Black pepper to taste
- 8 small flour tortillas
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup mozzarella cheese
- 1/4 tsp salt (for sauce)
- 1/4 tsp black pepper (for sauce)
- 2 tbsp chopped parsley (optional)
Instructions
- Preheat oven to 190°C (375°F) and lightly grease a baking dish.
- In a bowl, season shredded chicken with paprika, garlic powder, onion powder, salt, and black pepper.
- Spoon chicken evenly onto tortillas and roll tightly.
- Place rolled tortillas seam-side down in the baking dish.
- In a saucepan over medium heat, melt butter.
- Whisk in flour and cook for 1 minute to form a roux.
- Gradually whisk in milk until smooth and thickened.
- Stir in cheddar and mozzarella cheese until melted and creamy.
- Season sauce with salt and black pepper.
- Pour cheese sauce evenly over tortillas.
- Bake for 20–25 minutes until bubbly and lightly golden.
- Garnish with parsley and serve warm.

- Use rotisserie chicken for convenience.
- Add sautéed onions or peppers for extra flavor.
