Description
Fluffy baked potatoes stuffed with seasoned taco meat, cheese, and your favorite toppings for a fun Tex-Mex twist on a classic comfort food.
Ingredients
- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 lb ground beef or ground turkey
- 1 packet taco seasoning (or 2 tablespoons homemade seasoning)
- 1/2 cup water
- 1 cup shredded cheddar or Mexican blend cheese
- 1/2 cup sour cream
- 1/2 cup salsa
- 1/2 cup shredded lettuce
- 1/2 cup diced tomatoes
- 2 green onions, sliced
- Optional: jalapeños, avocado, cilantro
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes, rub with olive oil, and pierce with a fork. Bake for 50-60 minutes, until tender.
- Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
- Stir in taco seasoning and water. Simmer for 5 minutes until thickened.
- Once potatoes are done, cut a slit in the top of each and fluff insides with a fork.
- Fill each potato with taco meat, cheese, sour cream, salsa, and desired toppings.
- Serve hot and enjoy.
Notes
- For a faster option, microwave potatoes until tender (8-10 minutes per potato).
- Can substitute chicken or black beans for a lighter or vegetarian version.
- Top with guacamole for extra creaminess.
