Description

Fluffy baked potatoes stuffed with seasoned taco meat, cheese, and your favorite toppings for a fun Tex-Mex twist on a classic comfort food.


Ingredients

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning (or 2 tablespoons homemade seasoning)
  • 1/2 cup water
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 2 green onions, sliced
  • Optional: jalapeños, avocado, cilantro


Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes, rub with olive oil, and pierce with a fork. Bake for 50-60 minutes, until tender.
  2. Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  3. Stir in taco seasoning and water. Simmer for 5 minutes until thickened.
  4. Once potatoes are done, cut a slit in the top of each and fluff insides with a fork.
  5. Fill each potato with taco meat, cheese, sour cream, salsa, and desired toppings.
  6. Serve hot and enjoy.
