Description

A homemade copycat of Taco Bell’s iconic Mexican Pizza featuring crispy tortillas layered with refried beans, seasoned sauce, and melted cheese, finished with fresh toppings.


Ingredients

  • 2 flour tortillas (8-inch)
  • 1/2 cup refried beans
  • 1/2 cup enchilada sauce or Mexican pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons vegetable oil (for frying)
  • 2 tablespoons diced tomatoes
  • 2 tablespoons sliced green onions
  • 1 tablespoon sliced black olives (optional)


Instructions

  1. Heat oil in a skillet over medium heat and lightly fry the flour tortillas until crispy and golden on both sides. Drain on paper towels.
  2. Spread refried beans evenly over one crispy tortilla.
  3. Place the second tortilla on top, then spread enchilada sauce evenly over it.
  4. Sprinkle mozzarella and cheddar cheese over the sauce.
  5. Transfer to a preheated oven at 400°F (200°C) and bake for 8–10 minutes, or until cheese is fully melted.
  6. Remove from oven and top with diced tomatoes, green onions, and black olives if using.
  7. Slice into quarters and serve warm.

Notes

  • For extra crispiness, bake the fried tortillas for 2–3 minutes before assembling.
  • You can use a blend of Mexican cheeses for more flavor.
  • Serve with sour cream or salsa on the side if desired.
