A homemade copycat of Taco Bell’s iconic Mexican Pizza featuring crispy tortillas layered with refried beans, seasoned sauce, and melted cheese, finished with fresh toppings.
Ingredients
- 2 flour tortillas (8-inch)
- 1/2 cup refried beans
- 1/2 cup enchilada sauce or Mexican pizza sauce
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 2 tablespoons vegetable oil (for frying)
- 2 tablespoons diced tomatoes
- 2 tablespoons sliced green onions
- 1 tablespoon sliced black olives (optional)
Instructions
- Heat oil in a skillet over medium heat and lightly fry the flour tortillas until crispy and golden on both sides. Drain on paper towels.
- Spread refried beans evenly over one crispy tortilla.
- Place the second tortilla on top, then spread enchilada sauce evenly over it.
- Sprinkle mozzarella and cheddar cheese over the sauce.
- Transfer to a preheated oven at 400°F (200°C) and bake for 8–10 minutes, or until cheese is fully melted.
- Remove from oven and top with diced tomatoes, green onions, and black olives if using.
- Slice into quarters and serve warm.
Notes
- For extra crispiness, bake the fried tortillas for 2–3 minutes before assembling.
- You can use a blend of Mexican cheeses for more flavor.
- Serve with sour cream or salsa on the side if desired.
