Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup milk
  • 2 large eggs
  • 2 tbsp melted butter (plus more for cooking)
  • 1 tsp vanilla extract
  • Optional toppings: cajeta (Mexican caramel sauce), maple syrup, powdered sugar, fresh fruit


Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  2. In another bowl, whisk together milk, eggs, melted butter, and vanilla.
  3. Pour wet ingredients into dry ingredients and gently mix until just combined (do not overmix).
  4. Heat a skillet or griddle over medium heat and lightly grease with butter.
  5. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on top, then flip and cook until golden brown.
  6. Repeat with remaining batter, greasing skillet as needed.
  7. Serve warm with cajeta, syrup, powdered sugar, or fruit.

Notes

  • Do not overmix the batter—lumps are fine and make fluffier pancakes.
  • Cajeta or condensed milk gives an authentic Mexican touch.
  • You can add a pinch of nutmeg or orange zest for extra flavor.
