Description

Crispy stuffed mashed potato nests baked until golden and filled with cheese and savory toppings, perfect as an appetizer or side dish.


Ingredients

  • 3 cups mashed potatoes
  • 1 large egg
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup cooked bacon bits
  • 1/2 cup shredded mozzarella cheese
  • Chopped chives for garnish


Instructions

  1. Preheat the oven to 200°C (400°F) and grease a muffin tin.
  2. In a large bowl, mix mashed potatoes, egg, cheddar cheese, Parmesan, salt, pepper, and garlic powder.
  3. Scoop the mixture into the muffin tin and press to form nests with a well in the center.
  4. Bake for 20–25 minutes until edges are lightly crispy.
  5. Remove from oven and fill each nest with bacon bits and mozzarella cheese.
  6. Return to the oven and bake for another 8–10 minutes until cheese is melted.
  7. Garnish with chopped chives and serve warm.
