Crispy stuffed mashed potato nests baked until golden and filled with cheese and savory toppings, perfect as an appetizer or side dish.
Ingredients
- 3 cups mashed potatoes
- 1 large egg
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 cup cooked bacon bits
- 1/2 cup shredded mozzarella cheese
- Chopped chives for garnish
Instructions
- Preheat the oven to 200°C (400°F) and grease a muffin tin.
- In a large bowl, mix mashed potatoes, egg, cheddar cheese, Parmesan, salt, pepper, and garlic powder.
- Scoop the mixture into the muffin tin and press to form nests with a well in the center.
- Bake for 20–25 minutes until edges are lightly crispy.
- Remove from oven and fill each nest with bacon bits and mozzarella cheese.
- Return to the oven and bake for another 8–10 minutes until cheese is melted.
- Garnish with chopped chives and serve warm.
Notes
- Use leftover mashed potatoes for best results.
- Substitute bacon with sautéed mushrooms for a vegetarian option.
