Description
Strawberry shortcake poke cake is a light and fluffy vanilla cake poked and filled with sweet strawberry gelatin, then topped with whipped cream for a classic, refreshing dessert.
Ingredients
- 1 box (15.25 oz) vanilla or white cake mix
- Ingredients required to prepare cake mix (eggs, oil, water)
- 1 box (3 oz) strawberry gelatin
- 1 cup boiling water
- 1 cup cold water
- 2 cups whipped topping or whipped cream
- 1 1/2 cups fresh strawberries, sliced
Instructions
- Prepare and bake the cake according to package instructions in a 9×13-inch pan.
- Allow the cake to cool for about 10 minutes.
- Using the handle of a wooden spoon, poke holes evenly across the cake.
- In a bowl, dissolve strawberry gelatin in boiling water, then stir in cold water.
- Slowly pour the gelatin mixture over the cake, allowing it to soak into the holes.
- Refrigerate the cake for at least 2 hours until set.
- Spread whipped topping evenly over the chilled cake.
- Top with sliced fresh strawberries.
- Refrigerate until ready to serve.
Notes
- Chill well so the gelatin sets properly.
- Fresh whipped cream can be used instead of whipped topping.
