Description

Strawberry shortcake poke cake is a light and fluffy vanilla cake poked and filled with sweet strawberry gelatin, then topped with whipped cream for a classic, refreshing dessert.


Ingredients

  • 1 box (15.25 oz) vanilla or white cake mix
  • Ingredients required to prepare cake mix (eggs, oil, water)
  • 1 box (3 oz) strawberry gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 2 cups whipped topping or whipped cream
  • 1 1/2 cups fresh strawberries, sliced


Instructions

  1. Prepare and bake the cake according to package instructions in a 9×13-inch pan.
  2. Allow the cake to cool for about 10 minutes.
  3. Using the handle of a wooden spoon, poke holes evenly across the cake.
  4. In a bowl, dissolve strawberry gelatin in boiling water, then stir in cold water.
  5. Slowly pour the gelatin mixture over the cake, allowing it to soak into the holes.
  6. Refrigerate the cake for at least 2 hours until set.
  7. Spread whipped topping evenly over the chilled cake.
  8. Top with sliced fresh strawberries.
  9. Refrigerate until ready to serve.

Notes
