Description

Strawberry cream cheese muffins are soft, fluffy muffins filled with juicy strawberries and a sweet, creamy cream cheese center, perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries, diced
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for filling)


Instructions

  1. Preheat the oven to 175°C (350°F) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, salt, and granulated sugar.
  3. In another bowl, mix melted butter, eggs, milk, and vanilla extract.
  4. Add wet ingredients to dry ingredients and stir until just combined.
  5. Gently fold in diced strawberries.
  6. In a separate bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
  7. Fill muffin cups halfway with batter.
  8. Add a spoonful of cream cheese filling to the center of each muffin.
  9. Top with remaining batter, covering the filling.
  10. Bake for 20–25 minutes until lightly golden and set.
  11. Cool for 10 minutes before serving.
