Description

Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh strawberries, diced
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract (for filling)
Instructions
- Preheat the oven to 175°C (350°F) and line a muffin tin with paper liners.
- In a bowl, whisk together flour, baking powder, salt, and granulated sugar.
- In another bowl, mix melted butter, eggs, milk, and vanilla extract.
- Add wet ingredients to dry ingredients and stir until just combined.
- Gently fold in diced strawberries.
- In a separate bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
- Fill muffin cups halfway with batter.
- Add a spoonful of cream cheese filling to the center of each muffin.
- Top with remaining batter, covering the filling.
- Bake for 20–25 minutes until lightly golden and set.
- Cool for 10 minutes before serving.
Notes
- Use fresh strawberries for best texture.
- Do not overmix the batter.
