Description
A delicious fusion of a classic cheeseburger and quesadilla—crispy tortillas stuffed with smashed burger patties, melted cheese, and your favorite toppings.
Ingredients
- 1 lb ground beef (80/20 preferred)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 4 large flour tortillas
- 2 cups shredded cheddar or American cheese
- 1/2 cup diced onions (optional)
- 1/4 cup pickles, chopped
- 2 tbsp mayonnaise
- 2 tbsp ketchup
- 1 tbsp mustard
- 1 tbsp butter or oil (for cooking)
Instructions
- Divide ground beef into 8 equal portions and season with salt, pepper, garlic powder, and paprika.
- Heat a skillet or griddle over medium-high heat. Place beef portions on the hot surface and smash flat with a spatula. Cook for 2–3 minutes per side until browned and cooked through. Remove and set aside.
- In the same skillet, melt butter or add a little oil. Place a tortilla down, sprinkle with cheese, add 2 smashed patties, onions, pickles, and more cheese. Top with another tortilla.
- Cook for 2–3 minutes per side, pressing gently with a spatula, until tortillas are golden and cheese is melted.
- Repeat with remaining ingredients. Slice into wedges and serve warm.
- Mix mayonnaise, ketchup, and mustard to make a simple burger sauce for dipping.
Notes
- Use shredded American, cheddar, or a cheese blend for the best melt.
- Add jalapeños, bacon, or lettuce and tomato for extra flavor.
- These quesadillas can be cooked in a panini press for easy pressing and melting.
