Description

A delicious fusion of a classic cheeseburger and quesadilla—crispy tortillas stuffed with smashed burger patties, melted cheese, and your favorite toppings.

Ingredients

  • 1 lb ground beef (80/20 preferred)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 4 large flour tortillas
  • 2 cups shredded cheddar or American cheese
  • 1/2 cup diced onions (optional)
  • 1/4 cup pickles, chopped
  • 2 tbsp mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 1 tbsp butter or oil (for cooking)

Instructions

  1. Divide ground beef into 8 equal portions and season with salt, pepper, garlic powder, and paprika.
  2. Heat a skillet or griddle over medium-high heat. Place beef portions on the hot surface and smash flat with a spatula. Cook for 2–3 minutes per side until browned and cooked through. Remove and set aside.
  3. In the same skillet, melt butter or add a little oil. Place a tortilla down, sprinkle with cheese, add 2 smashed patties, onions, pickles, and more cheese. Top with another tortilla.
  4. Cook for 2–3 minutes per side, pressing gently with a spatula, until tortillas are golden and cheese is melted.
  5. Repeat with remaining ingredients. Slice into wedges and serve warm.
  6. Mix mayonnaise, ketchup, and mustard to make a simple burger sauce for dipping.

Notes

  • Use shredded American, cheddar, or a cheese blend for the best melt.
  • Add jalapeños, bacon, or lettuce and tomato for extra flavor.
  • These quesadillas can be cooked in a panini press for easy pressing and melting.
  • Great for game day or a fun twist on weeknight burgers.
