Description
Skillet beef stroganoff tortellini is a rich, comforting one-pan meal made with tender beef, cheese-filled tortellini, mushrooms, and a creamy Parmesan sauce.
Ingredients
- 1 pound sirloin steak or beef stew meat, thinly sliced
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 small onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon Worcestershire sauce (halal)
- 2 cups beef broth
- 18 oz refrigerated cheese tortellini
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 cup sour cream
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add beef and season with salt, pepper, and paprika; sear until browned, then remove and set aside.
- In the same skillet, melt butter and sauté onion for 2–3 minutes until softened.
- Add garlic and mushrooms; cook until mushrooms release moisture and soften.
- Stir in Worcestershire sauce and beef broth, scraping up browned bits.
- Bring to a simmer and add tortellini.
- Cover and cook for 5–7 minutes until tortellini is tender.
- Reduce heat to low and stir in heavy cream and Parmesan cheese until melted.
- Add sour cream and return beef to the skillet.
- Simmer gently for 2–3 minutes until sauce is creamy.
- Garnish with parsley and serve hot.
Notes
- Slice beef thinly against the grain for tenderness.
- Do not boil after adding sour cream to prevent curdling.
- Serve with crusty bread or a side salad.
