Description

Skillet beef stroganoff tortellini is a rich, comforting one-pan meal made with tender beef, cheese-filled tortellini, mushrooms, and a creamy Parmesan sauce.


Ingredients

  • 1 pound sirloin steak or beef stew meat, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon Worcestershire sauce (halal)
  • 2 cups beef broth
  • 18 oz refrigerated cheese tortellini
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add beef and season with salt, pepper, and paprika; sear until browned, then remove and set aside.
  3. In the same skillet, melt butter and sauté onion for 2–3 minutes until softened.
  4. Add garlic and mushrooms; cook until mushrooms release moisture and soften.
  5. Stir in Worcestershire sauce and beef broth, scraping up browned bits.
  6. Bring to a simmer and add tortellini.
  7. Cover and cook for 5–7 minutes until tortellini is tender.
  8. Reduce heat to low and stir in heavy cream and Parmesan cheese until melted.
  9. Add sour cream and return beef to the skillet.
  10. Simmer gently for 2–3 minutes until sauce is creamy.
  11. Garnish with parsley and serve hot.

Notes

  • Slice beef thinly against the grain for tenderness.
  • Do not boil after adding sour cream to prevent curdling.
  • Serve with crusty bread or a side salad.
