Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter or vegetable oil
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour


Instructions

  1. Preheat the oven to 175°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, mix mashed bananas with melted butter.
  3. Stir in sugar, egg, and vanilla extract until combined.
  4. Add baking soda and salt, mixing well.
  5. Fold in flour just until incorporated.
  6. Divide batter evenly among muffin cups.
  7. Bake for 20–25 minutes until a toothpick inserted comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

  • Use very ripe bananas for the best flavor.
