Simple banana bread muffins that are soft, moist, and lightly sweet, perfect for breakfast or an easy snack using ripe bananas.
Ingredients
- 3 ripe bananas, mashed
- 1/3 cup melted butter or vegetable oil
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
Instructions
- Preheat the oven to 175°C (350°F) and line a muffin tin with paper liners.
- In a large bowl, mix mashed bananas with melted butter.
- Stir in sugar, egg, and vanilla extract until combined.
- Add baking soda and salt, mixing well.
- Fold in flour just until incorporated.
- Divide batter evenly among muffin cups.
- Bake for 20–25 minutes until a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
- Use very ripe bananas for the best flavor.
- Do not overmix to keep muffins tender.
- Add chocolate chips or nuts if desired.
