Description

Sicilian Pizza is a thick, fluffy, rectangular-style pizza with a crisp bottom crust, topped with rich tomato sauce, melted mozzarella, and often finished with olive oil and herbs. It’s hearty, airy, and perfect for sharing.


Ingredients

  • 4 cups all-purpose flour
  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon sugar
  • 1 1/2 cups warm water (110°F / 45°C)
  • 2 teaspoons salt
  • 1/4 cup olive oil (plus extra for pan)
  • 2 cups crushed tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt (for sauce)
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves (optional)


Instructions

  1. In a bowl, combine warm water, sugar, and yeast. Let sit 5–10 minutes until foamy.
  2. In a large bowl, mix flour and salt. Add yeast mixture and olive oil. Mix until a sticky dough forms.
  3. Knead for 8–10 minutes until smooth. Place in a greased bowl, cover, and let rise for 1–1 1/2 hours until doubled.
  4. Generously oil a 9×13-inch baking pan. Press dough evenly into the pan.
  5. Cover and let rise again for 30–45 minutes until puffy.
  6. Preheat oven to 425°F (220°C).
  7. In a bowl, mix crushed tomatoes, garlic, oregano, and salt.
  8. Spread sauce evenly over the dough. Sprinkle mozzarella and Parmesan on top.
  9. Bake for 20–25 minutes until crust is golden and cheese is bubbly.
  10. Cool slightly, garnish with fresh basil if desired, slice into squares, and serve.

Notes

  • Use plenty of olive oil in the pan for a crispy bottom crust.
  • Allow proper rising time for a light, airy texture.
  • Add pepperoni or anchovies for variation.
  • Let pizza rest 5–10 minutes before slicing.
