Description

Self-saucing butterscotch pudding is a warm, old-fashioned dessert that bakes into a fluffy sponge cake on top with a rich, gooey butterscotch sauce underneath.


Ingredients

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar (for batter)
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar (for topping)
  • 1 1/4 cups boiling water


Instructions

  1. Preheat the oven to 175°C (350°F) and lightly grease a baking dish.
  2. In a bowl, whisk together flour, baking powder, salt, and brown sugar.
  3. Add melted butter, milk, and vanilla extract; stir until smooth.
  4. Spread batter evenly into the prepared baking dish.
  5. Sprinkle remaining brown sugar evenly over the batter.
  6. Carefully pour boiling water over the back of a spoon onto the batter. Do not stir.
  7. Bake uncovered for 35–40 minutes until the top is set and golden.
  8. Remove from oven and let stand for 5 minutes before serving.

Notes

  • Do not stir after adding boiling water.
  • Serve warm for best sauce texture.
  • Delicious with vanilla ice cream or custard.
