Description

Crispy on the outside and tender on the inside, these salmon patties are made with canned or fresh salmon, breadcrumbs, and simple seasonings for a quick and delicious meal.


Ingredients

  • 1 can (14.75 oz) salmon, drained and flaked (or 1 1/2 cups cooked salmon)
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/4 cup onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil (for frying)
  • Lemon wedges, for serving


Instructions

  1. In a large bowl, combine salmon, breadcrumbs, onion, parsley, eggs, mustard, lemon juice, garlic powder, paprika, salt, and pepper. Mix until well combined.
  2. Shape mixture into 6-8 patties.
  3. Heat olive oil in a skillet over medium heat.
  4. Cook patties for 3-4 minutes per side, until golden brown and crispy.
  5. Serve hot with lemon wedges, tartar sauce, or over a fresh salad.

Notes

  • For extra crunch, use panko breadcrumbs instead of regular.
  • These can be baked at 400°F (200°C) for 15-18 minutes instead of frying.
  • Leftovers can be refrigerated for up to 3 days or frozen for 1 month.
