Ingredients

  • 2 pounds sweet potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 1/4 cup pure maple syrup
  • 1 tablespoon melted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon smoked paprika (optional)
  • Fresh thyme or parsley for garnish (optional)


Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Place sweet potato cubes in a large bowl.
  3. Drizzle with olive oil, salt, pepper, cinnamon, and paprika; toss to coat evenly.
  4. Spread sweet potatoes in a single layer on the baking sheet.
  5. Roast for 25–30 minutes, flipping halfway, until tender and golden.
  6. In a small bowl, mix maple syrup and melted butter.
  7. Remove sweet potatoes from oven and drizzle with maple glaze.
  8. Return to oven and roast for an additional 8–10 minutes until caramelized.
