Ingredients
- 2 pounds sweet potatoes, peeled and cubed
- 3 tablespoons olive oil
- 1/4 cup pure maple syrup
- 1 tablespoon melted butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon smoked paprika (optional)
- Fresh thyme or parsley for garnish (optional)
Instructions
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Place sweet potato cubes in a large bowl.
- Drizzle with olive oil, salt, pepper, cinnamon, and paprika; toss to coat evenly.
- Spread sweet potatoes in a single layer on the baking sheet.
- Roast for 25–30 minutes, flipping halfway, until tender and golden.
- In a small bowl, mix maple syrup and melted butter.
- Remove sweet potatoes from oven and drizzle with maple glaze.
- Return to oven and roast for an additional 8–10 minutes until caramelized.
- Garnish with fresh herbs if desired and serve warm.
