Ingredients
- 3 tbsp unsalted butter
- 1 (10 oz) bag mini marshmallows
- 6 cups Rice Krispies cereal
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1/2 cup granulated sugar
- Optional toppings: whipped cream, crushed Rice Krispies, or melted white chocolate drizzle
Instructions
- In a large saucepan, melt the butter over low heat. Add the marshmallows and stir until completely melted and smooth.
- Remove from heat and quickly stir in the Rice Krispies cereal until evenly coated.
- Press the mixture firmly into the bottom and slightly up the sides of a greased 9-inch springform pan. Set aside to cool completely.
- In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In a separate bowl, whip the heavy cream and granulated sugar until stiff peaks form.
- Fold the whipped cream gently into the cream cheese mixture until well combined.
- Spoon the cheesecake filling over the cooled Rice Krispy crust and smooth the top.
- Refrigerate for at least 4 hours (or overnight) to set completely.
- Before serving, top with whipped cream, extra Rice Krispies, or drizzle with melted white chocolate if desired.
