Rice Krispy Treat No-Bake Cheesecake is a fun and delicious dessert mashup that combines the gooey sweetness of Rice Krispy treats with the creamy richness of cheesecake. The crispy cereal crust adds texture, while the fluffy cheesecake filling makes it irresistibly smooth—perfect for parties or an easy no-bake treat.


Ingredients

  • 3 tbsp unsalted butter
  • 1 (10 oz) bag mini marshmallows
  • 6 cups Rice Krispies cereal
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 cup granulated sugar
  • Optional toppings: whipped cream, crushed Rice Krispies, or melted white chocolate drizzle


Instructions

  1. In a large saucepan, melt the butter over low heat. Add the marshmallows and stir until completely melted and smooth.
  2. Remove from heat and quickly stir in the Rice Krispies cereal until evenly coated.
  3. Press the mixture firmly into the bottom and slightly up the sides of a greased 9-inch springform pan. Set aside to cool completely.
  4. In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  5. In a separate bowl, whip the heavy cream and granulated sugar until stiff peaks form.
  6. Fold the whipped cream gently into the cream cheese mixture until well combined.
  7. Spoon the cheesecake filling over the cooled Rice Krispy crust and smooth the top.
  8. Refrigerate for at least 4 hours (or overnight) to set completely.
  9. Before serving, top with whipped cream, extra Rice Krispies, or drizzle with melted white chocolate if desired.
