Ingredients

  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup raspberry jam (seedless preferred)
  • 1/2 cup old-fashioned oats (optional for crumble texture)
  • Powdered sugar for dusting (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until fully combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture, stirring until a soft dough forms.
  6. Set aside 1/2 cup of dough to use as the crumble topping. Stir oats into this portion if desired.
  7. Using a cookie scoop, portion dough onto the baking sheet. Use your thumb or the back of a spoon to create an indentation in the center of each cookie.
  8. Fill each indentation with about 1 teaspoon of raspberry jam.
  9. Sprinkle a small amount of the reserved crumble dough over the top of each cookie.
  10. Bake for 12–14 minutes, or until edges are lightly golden.
  11. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  12. Dust with powdered sugar before serving if desired.
