Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar (plus extra for rolling)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup pumpkin puree


Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, vanilla, and pumpkin puree until smooth.
  4. Gradually add dry ingredients to wet mixture, mixing until just combined.
  5. Roll dough into 1-inch balls and coat with sugar.
  6. Place on baking sheets about 2 inches apart and flatten slightly.
  7. Bake for 10-12 minutes, until edges are set but centers are soft.
  8. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
