Ingredients
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar (plus extra for rolling)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup pumpkin puree
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
- In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, vanilla, and pumpkin puree until smooth.
- Gradually add dry ingredients to wet mixture, mixing until just combined.
- Roll dough into 1-inch balls and coat with sugar.
- Place on baking sheets about 2 inches apart and flatten slightly.
- Bake for 10-12 minutes, until edges are set but centers are soft.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack.
Notes
- For extra sweetness, drizzle with a vanilla glaze after baking.
- Chill dough for 30 minutes before baking for thicker cookies.
- Store in an airtight container for up to 5 days or freeze for up to 2 months.
