Protein Banana Oat Breakfast Squares are wholesome, soft-baked bars made with ripe bananas, oats, and protein-rich ingredients for a nutritious and satisfying start to the day.
Ingredients
- 2 ripe bananas, mashed
- 2 cups rolled oats
- 1/2 cup vanilla or unflavored protein powder
- 1/2 cup peanut butter or almond butter
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1/4 cup milk
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup dark chocolate chips (optional)
Instructions
- Preheat oven to 180°C (350°F) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, mix mashed bananas, peanut butter, honey, eggs, milk, and vanilla extract until smooth.
- Stir in oats, protein powder, cinnamon, baking powder, and salt.
- Fold in chocolate chips if using.
- Spread mixture evenly into prepared pan.
- Bake for 20–25 minutes until set and lightly golden.
- Allow to cool completely before slicing into squares.
- Store in an airtight container in the refrigerator.
Notes
- Use very ripe bananas for natural sweetness.
- Can substitute dairy-free milk for a lactose-free option.
- Great for meal prep and can be frozen for up to 1 month.
