Description

Potato Stir-Fry is a quick, savory, and satisfying dish made with thinly sliced or diced potatoes stir-fried with onions, garlic, and simple seasonings. Crispy on the edges and tender inside, this versatile recipe can be enjoyed as a side dish or light meal with rice or flatbread.


Ingredients

  • 3 medium potatoes, peeled and thinly sliced (or diced)
  • 2 tbsp vegetable oil
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili flakes (optional)
  • 1/2 tsp cumin seeds
  • Salt, to taste
  • 1/4 tsp black pepper
  • 1 green chili, sliced (optional)
  • 1 tbsp chopped cilantro (for garnish)


Instructions

  1. Peel and thinly slice the potatoes. Soak in cold water for 10 minutes to remove excess starch, then drain and pat dry.
  2. Heat vegetable oil in a large skillet or wok over medium heat.
  3. Add cumin seeds and let them sizzle for 10–15 seconds.
  4. Add sliced onions and sauté until soft and lightly golden.
  5. Stir in minced garlic and cook for 30 seconds until fragrant.
  6. Add the sliced potatoes, turmeric, chili flakes, salt, and black pepper. Toss well to coat the potatoes in the spices.
  7. Cover and cook for 8–10 minutes, stirring occasionally, until the potatoes are tender and golden brown on the edges.
  8. Uncover and cook for another 3–5 minutes to crisp them up slightly.
  9. Taste and adjust seasoning as needed. Garnish with sliced green chili and fresh cilantro before serving.

Notes

  • For extra flavor, add bell peppers or peas during the last few minutes of cooking.
  • Soaking potatoes helps them stay crisp while stir-frying.
  • Use non-stick or cast-iron pan for best results.
  • Serve with rice, roti, or eggs for a complete meal.
