Description
Potato Stir-Fry is a quick, savory, and satisfying dish made with thinly sliced or diced potatoes stir-fried with onions, garlic, and simple seasonings. Crispy on the edges and tender inside, this versatile recipe can be enjoyed as a side dish or light meal with rice or flatbread.
Ingredients
- 3 medium potatoes, peeled and thinly sliced (or diced)
- 2 tbsp vegetable oil
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1/2 tsp turmeric powder
- 1/2 tsp red chili flakes (optional)
- 1/2 tsp cumin seeds
- Salt, to taste
- 1/4 tsp black pepper
- 1 green chili, sliced (optional)
- 1 tbsp chopped cilantro (for garnish)
Instructions
- Peel and thinly slice the potatoes. Soak in cold water for 10 minutes to remove excess starch, then drain and pat dry.
- Heat vegetable oil in a large skillet or wok over medium heat.
- Add cumin seeds and let them sizzle for 10–15 seconds.
- Add sliced onions and sauté until soft and lightly golden.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add the sliced potatoes, turmeric, chili flakes, salt, and black pepper. Toss well to coat the potatoes in the spices.
- Cover and cook for 8–10 minutes, stirring occasionally, until the potatoes are tender and golden brown on the edges.
- Uncover and cook for another 3–5 minutes to crisp them up slightly.
- Taste and adjust seasoning as needed. Garnish with sliced green chili and fresh cilantro before serving.
Notes
- For extra flavor, add bell peppers or peas during the last few minutes of cooking.
- Soaking potatoes helps them stay crisp while stir-frying.
- Use non-stick or cast-iron pan for best results.
- Serve with rice, roti, or eggs for a complete meal.
