Description

A hearty and comforting quiche made with tender potatoes, eggs, cheese, and seasonings. Perfect for breakfast, brunch, or a light dinner.


Ingredients

  • 1 prepared pie crust (9-inch)
  • 2 medium potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 6 large eggs
  • 1 cup milk or half-and-half
  • 1 cup shredded cheddar or Swiss cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp nutmeg (optional)
  • Salt and black pepper to taste
  • Fresh parsley or chives, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Place pie crust in a 9-inch pie dish and set aside.
  2. In a skillet, heat olive oil over medium heat. Add potatoes and cook until lightly golden and tender, about 10–12 minutes. Stir in onion and cook until softened.
  3. In a bowl, whisk together eggs, milk, garlic powder, nutmeg, salt, and pepper.
  4. Spread potato and onion mixture evenly over pie crust.
  5. Sprinkle cheese on top, then pour egg mixture over filling.
  6. Bake for 35–40 minutes, or until center is set and top is golden.
  7. Cool for 5–10 minutes before slicing. Garnish with parsley or chives.

Notes

  • For a crustless version, skip the pie crust and lightly grease the dish before adding filling.
  • You can use leftover roasted potatoes for quicker prep.
