Description
A hearty and comforting quiche made with tender potatoes, eggs, cheese, and seasonings. Perfect for breakfast, brunch, or a light dinner.
Ingredients
- 1 prepared pie crust (9-inch)
- 2 medium potatoes, peeled and diced
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 6 large eggs
- 1 cup milk or half-and-half
- 1 cup shredded cheddar or Swiss cheese
- 1/2 tsp garlic powder
- 1/4 tsp nutmeg (optional)
- Salt and black pepper to taste
- Fresh parsley or chives, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Place pie crust in a 9-inch pie dish and set aside.
- In a skillet, heat olive oil over medium heat. Add potatoes and cook until lightly golden and tender, about 10–12 minutes. Stir in onion and cook until softened.
- In a bowl, whisk together eggs, milk, garlic powder, nutmeg, salt, and pepper.
- Spread potato and onion mixture evenly over pie crust.
- Sprinkle cheese on top, then pour egg mixture over filling.
- Bake for 35–40 minutes, or until center is set and top is golden.
- Cool for 5–10 minutes before slicing. Garnish with parsley or chives.
Notes
- For a crustless version, skip the pie crust and lightly grease the dish before adding filling.
- You can use leftover roasted potatoes for quicker prep.
- Add spinach, mushrooms, or bacon for extra flavor.
