Description

A hearty Polish-inspired dish featuring smoky kielbasa sausage simmered with tangy sauerkraut, onions, and seasonings for a comforting meal.


Ingredients

  • 2 lbs Polish kielbasa sausage, sliced into 1-inch pieces
  • 2 tablespoons olive oil or butter
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 lbs sauerkraut, drained and rinsed
  • 1 cup chicken broth (or beer for extra flavor)
  • 1 teaspoon caraway seeds (optional)
  • 1 teaspoon black pepper
  • 1 bay leaf
  • Salt to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil or butter in a large skillet or Dutch oven over medium heat.
  2. Add kielbasa slices and cook until browned on all sides. Remove and set aside.
  3. In the same pan, sauté onions until soft, then add garlic and cook for 1 minute.
  4. Stir in sauerkraut, chicken broth (or beer), caraway seeds, black pepper, and bay leaf.
  5. Return kielbasa to the pan and mix well. Cover and simmer on low heat for 30 minutes to allow flavors to meld.
  6. Remove bay leaf before serving. Garnish with fresh parsley.

Notes

  • For a richer dish, add diced potatoes or apples when simmering.
  • This dish tastes even better the next day as flavors deepen.
  • Serve with rye bread or mashed potatoes for a complete meal.
