Ingredients

  • 1 (8 oz) wheel of Brie cheese, chilled
  • 1/2 cup shelled pistachios, finely chopped
  • 1 sheet puff pastry, thawed
  • 1 egg (beaten, for egg wash)
  • 2 tbsp fig jam
  • 1 tbsp honey
  • 1/2 tsp balsamic vinegar (optional, for a tangy glaze)
  • Fresh thyme leaves or chopped pistachios for garnish (optional)


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the Brie wheel into 1-inch cubes and place in the freezer for 10–15 minutes to firm up (this helps prevent melting too fast).
  3. On a lightly floured surface, roll out the puff pastry and cut into 2-inch squares.
  4. Place one Brie cube in the center of each pastry square. Fold the corners up around the Brie and pinch to seal, forming a small parcel.
  5. Brush each bite lightly with the beaten egg and roll the top in finely chopped pistachios.
  6. Arrange the bites seam-side down on the prepared baking sheet.
  7. Bake for 12–15 minutes, or until golden brown and puffed.
  8. While baking, prepare the fig honey glaze: in a small saucepan, combine fig jam, honey, and balsamic vinegar (if using). Warm over low heat until smooth and glossy.
  9. Remove the Brie bites from the oven and let cool slightly. Drizzle with the warm fig honey glaze and sprinkle with thyme or extra pistachios.
  10. Serve warm for the best flavor and texture.
