Ingredients
- 1 (8 oz) wheel of Brie cheese, chilled
- 1/2 cup shelled pistachios, finely chopped
- 1 sheet puff pastry, thawed
- 1 egg (beaten, for egg wash)
- 2 tbsp fig jam
- 1 tbsp honey
- 1/2 tsp balsamic vinegar (optional, for a tangy glaze)
- Fresh thyme leaves or chopped pistachios for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the Brie wheel into 1-inch cubes and place in the freezer for 10–15 minutes to firm up (this helps prevent melting too fast).
- On a lightly floured surface, roll out the puff pastry and cut into 2-inch squares.
- Place one Brie cube in the center of each pastry square. Fold the corners up around the Brie and pinch to seal, forming a small parcel.
- Brush each bite lightly with the beaten egg and roll the top in finely chopped pistachios.
- Arrange the bites seam-side down on the prepared baking sheet.
- Bake for 12–15 minutes, or until golden brown and puffed.
- While baking, prepare the fig honey glaze: in a small saucepan, combine fig jam, honey, and balsamic vinegar (if using). Warm over low heat until smooth and glossy.
- Remove the Brie bites from the oven and let cool slightly. Drizzle with the warm fig honey glaze and sprinkle with thyme or extra pistachios.
- Serve warm for the best flavor and texture.
