Ingredients
- For the Brie Bites:

- 1 egg, beaten
- 2 tbsp flour
- 1 tbsp olive oil or melted butter (for brushing)
- For the Cranberry Honey Glaze:
- 1/2 cup cranberry sauce (homemade or canned)
- 2 tbsp honey
- 1 tsp balsamic vinegar (optional, for depth)
- 1/2 tsp orange zest
Instructions
- Prepare the Brie Bites: Cut the brie into bite-sized cubes and place them on a parchment-lined baking sheet. Freeze for 20 minutes to firm up (this helps prevent melting during baking).
- In a shallow bowl, combine chopped pistachios, panko breadcrumbs, salt, and pepper.
- Coat each brie cube lightly in flour, then dip in beaten egg, and roll in the pistachio mixture to fully coat. Place back on the baking sheet.
- Preheat oven to 375°F (190°C). Lightly brush each brie bite with olive oil or melted butter.
- Bake for 8–10 minutes, or until the coating is golden and crisp. Be careful not to overbake or the cheese will ooze out.
- Make the Glaze: In a small saucepan over medium heat, combine cranberry sauce, honey, balsamic vinegar (if using), and orange zest. Stir until warm and slightly thickened, about 3–5 minutes. Remove from heat.
- Serve: Arrange brie bites on a serving platter and drizzle with warm cranberry honey glaze. Garnish with extra chopped pistachios or a sprig of thyme for presentation.

- Freezing the brie before baking prevents it from melting too quickly.
- For a shortcut, bake the brie bites in mini phyllo shells instead of breading them.
