Ingredients

  • For the Brie Bites:
  • 8 oz wheel of brie cheese (cut into 1-inch cubes)
  • 1/2 cup finely chopped pistachios
  • 1/2 cup panko breadcrumbs
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 egg, beaten
  • 2 tbsp flour
  • 1 tbsp olive oil or melted butter (for brushing)
  • For the Cranberry Honey Glaze:
  • 1/2 cup cranberry sauce (homemade or canned)
  • 2 tbsp honey
  • 1 tsp balsamic vinegar (optional, for depth)
  • 1/2 tsp orange zest


Instructions

  1. Prepare the Brie Bites: Cut the brie into bite-sized cubes and place them on a parchment-lined baking sheet. Freeze for 20 minutes to firm up (this helps prevent melting during baking).
  2. In a shallow bowl, combine chopped pistachios, panko breadcrumbs, salt, and pepper.
  3. Coat each brie cube lightly in flour, then dip in beaten egg, and roll in the pistachio mixture to fully coat. Place back on the baking sheet.
  4. Preheat oven to 375°F (190°C). Lightly brush each brie bite with olive oil or melted butter.
  5. Bake for 8–10 minutes, or until the coating is golden and crisp. Be careful not to overbake or the cheese will ooze out.
  6. Make the Glaze: In a small saucepan over medium heat, combine cranberry sauce, honey, balsamic vinegar (if using), and orange zest. Stir until warm and slightly thickened, about 3–5 minutes. Remove from heat.
  7. Serve: Arrange brie bites on a serving platter and drizzle with warm cranberry honey glaze. Garnish with extra chopped pistachios or a sprig of thyme for presentation.

  • Freezing the brie before baking prevents it from melting too quickly.
  • For a shortcut, bake the brie bites in mini phyllo shells instead of breading them.
