Description
Pane Siciliano is a traditional Italian sesame-crusted bread made with semolina flour, known for its golden crust, soft airy crumb, and distinctive coiled shape.
Ingredients
- 3 cups semolina flour (durum wheat)
- 1 cup all-purpose flour
- 2 1/4 tsp active dry yeast
- 1 1/4 cups warm water
- 1 tbsp olive oil
- 1 1/2 tsp salt
- 1 tsp sugar
- 2 tbsp sesame seeds
Instructions
- In a bowl, dissolve yeast and sugar in warm water. Let sit 5–10 minutes until foamy.
- Add semolina flour, all-purpose flour, olive oil, and salt. Mix until a dough forms.
- Knead for 8–10 minutes until smooth and elastic.
- Place dough in a lightly oiled bowl, cover, and let rise for 1–1 1/2 hours until doubled.
- Shape dough into a long rope and coil into an “S” or spiral shape.
- Lightly mist with water and sprinkle generously with sesame seeds.
- Cover and let rise another 30–40 minutes.
- Preheat oven to 220°C (425°F).
- Bake for 25–30 minutes until golden brown and hollow-sounding when tapped.
- Cool completely on a wire rack before slicing.
Notes
- Use fine semolina for best texture.
- Steam in the oven during the first 10 minutes for a crispier crust.
- Pairs beautifully with olive oil, cheeses, or soups.
