Description

Crispy oven-fried chicken coated in a ranch-seasoned breading, delivering all the flavor of fried chicken without the deep-frying. A family-friendly and easy weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 cup buttermilk
  • 1 packet (1 oz) ranch seasoning mix
  • 1 1/2 cups panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • 2 tbsp olive oil or melted butter
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease with cooking spray.
  2. In a bowl, combine buttermilk and half of the ranch seasoning mix. Add chicken and marinate for at least 30 minutes (or up to overnight).
  3. In a shallow dish, mix panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, black pepper, and remaining ranch seasoning.
  4. Remove chicken from buttermilk, allowing excess to drip off, then coat thoroughly in breadcrumb mixture.
  5. Place chicken on prepared baking sheet and drizzle lightly with olive oil or melted butter.
  6. Bake for 25–30 minutes (depending on thickness) until golden brown and chicken reaches an internal temperature of 165°F (74°C).
  7. Garnish with parsley and serve warm.

Notes

  • For extra crispiness, bake on a wire rack set over a baking sheet.
  • You can substitute Greek yogurt for buttermilk for a tangy marinade.
