Description

One-Pot Lasagna Soup is a hearty, comforting dish that captures all the flavors of traditional lasagna in an easy, one-pot meal. With ground beef, tomato sauce, herbs, and gooey melted cheese, it’s the perfect cozy dinner without the layering or baking hassle.


Ingredients

  • 1 lb ground beef (or Italian sausage)
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 (24 oz) jar marinara or pasta sauce
  • 1 (14 oz) can diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh basil or parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess grease if needed.
  2. Add chopped onion and garlic, cooking for 2–3 minutes until softened and fragrant.
  3. Stir in tomato paste, marinara sauce, diced tomatoes, Italian seasoning, salt, pepper, and red pepper flakes. Mix well.
  4. Pour in beef broth and bring the mixture to a boil.
  5. Add broken lasagna noodles and reduce heat to medium-low. Simmer uncovered for 12–15 minutes, stirring occasionally, until noodles are tender.
  6. Once cooked, adjust seasoning to taste and remove from heat.
  7. Ladle the soup into bowls and top with a spoonful of ricotta, a sprinkle of mozzarella, and a bit of Parmesan.
  8. Garnish with fresh basil or parsley before serving.

  • For extra creaminess, stir in 1/4 cup heavy cream or a dollop of ricotta directly into the soup before serving.
