One-Pot Lasagna Soup is a hearty, comforting dish that captures all the flavors of traditional lasagna in an easy, one-pot meal. With ground beef, tomato sauce, herbs, and gooey melted cheese, it’s the perfect cozy dinner without the layering or baking hassle.
Ingredients
- 1 lb ground beef (or Italian sausage)
- 1 tbsp olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 (24 oz) jar marinara or pasta sauce
- 1 (14 oz) can diced tomatoes
- 2 tbsp tomato paste
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
- 8 lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh basil or parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess grease if needed.
- Add chopped onion and garlic, cooking for 2–3 minutes until softened and fragrant.
- Stir in tomato paste, marinara sauce, diced tomatoes, Italian seasoning, salt, pepper, and red pepper flakes. Mix well.
- Pour in beef broth and bring the mixture to a boil.
- Add broken lasagna noodles and reduce heat to medium-low. Simmer uncovered for 12–15 minutes, stirring occasionally, until noodles are tender.
- Once cooked, adjust seasoning to taste and remove from heat.
- Ladle the soup into bowls and top with a spoonful of ricotta, a sprinkle of mozzarella, and a bit of Parmesan.
- Garnish with fresh basil or parsley before serving.

- For extra creaminess, stir in 1/4 cup heavy cream or a dollop of ricotta directly into the soup before serving.
