This no-bake coffee cheesecake is a smooth and creamy dessert infused with rich coffee flavor, set on a buttery biscuit crust and topped with whipped cream for an irresistible treat.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/3 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy cream
- 2 tbsp instant coffee granules
- 2 tbsp hot water
- 1 tsp vanilla extract
- Whipped cream, for topping
- Cocoa powder or chocolate shavings, for garnish (optional)
Instructions
- In a bowl, combine graham cracker crumbs and melted butter. Press mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while preparing filling.
- Dissolve instant coffee in hot water and let cool slightly.
- In a large bowl, beat cream cheese and powdered sugar until smooth.
- Add dissolved coffee and vanilla extract, mixing until incorporated.
- In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture until smooth.
- Pour filling over prepared crust and smooth the top. Refrigerate for at least 4 hours or until set.
- Before serving, top with whipped cream and garnish with cocoa powder or chocolate shavings.
