Description

This no-bake coffee cheesecake is a smooth and creamy dessert infused with rich coffee flavor, set on a buttery biscuit crust and topped with whipped cream for an irresistible treat.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • 2 tbsp instant coffee granules
  • 2 tbsp hot water
  • 1 tsp vanilla extract
  • Whipped cream, for topping
  • Cocoa powder or chocolate shavings, for garnish (optional)


Instructions

  1. In a bowl, combine graham cracker crumbs and melted butter. Press mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while preparing filling.
  2. Dissolve instant coffee in hot water and let cool slightly.
  3. In a large bowl, beat cream cheese and powdered sugar until smooth.
  4. Add dissolved coffee and vanilla extract, mixing until incorporated.
  5. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture until smooth.
  6. Pour filling over prepared crust and smooth the top. Refrigerate for at least 4 hours or until set.
  7. Before serving, top with whipped cream and garnish with cocoa powder or chocolate shavings.
