Description

Simple and delicious no-bake chocolate oat bars with a buttery oat base and a smooth chocolate-peanut butter layer.


Ingredients

  • 1 cup unsalted butter
  • 1/2 cup brown sugar, packed
  • 3 cups rolled oats
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 cup semisweet chocolate chips
  • 1/2 cup creamy peanut butter


Instructions

  1. Line an 8×8 inch baking pan with parchment paper.
  2. In a saucepan over medium heat, melt the butter and brown sugar until smooth and combined.
  3. Stir in oats, salt, and vanilla. Cook 2–3 minutes until heated through.
  4. Press half of the oat mixture firmly into the bottom of the pan.
  5. In a microwave-safe bowl, melt the chocolate chips and peanut butter together until smooth.
  6. Spread the chocolate mixture evenly over the oat layer.
  7. Top with the remaining oat mixture and press lightly.
  8. Refrigerate for at least 2 hours or until fully set.
  9. Lift from pan, slice into bars, and serve.

Notes

  • For firmer bars, add an extra 1/2 cup oats.
  • Use dairy-free butter and chocolate to make it vegan.
  • Add nuts or shredded coconut for extra texture.
  • Store refrigerated up to 1 week.
