Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup brewed strong coffee, cooled
  • 1 cup buttermilk, room temperature
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 1/2 cup unsweetened cocoa powder (for frosting)
  • 1/4 cup brewed coffee, cooled (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add buttermilk, brewed coffee, oil, eggs, and vanilla. Mix until smooth.
  4. Stir in boiling water until batter is thin and well combined.
  5. Divide batter evenly among prepared pans and bake for 30–35 minutes, or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes, then remove and cool completely on wire racks.
  7. For frosting: Beat butter until creamy. Add powdered sugar, cocoa powder, coffee, vanilla, and salt. Beat until fluffy and smooth.
  8. Assemble cake by spreading frosting between layers and over the top and sides.
  9. Decorate with chocolate shavings, cocoa powder, or coffee beans if desired.
