- Mississippi Mud Potatoes are a rich, cheesy, and creamy potato casserole baked until golden and bubbly. Packed with sour cream, cheese, and bacon, this comfort food dish is perfect as a hearty side for family dinners, potlucks, or holidays.
Ingredients
- 6 medium russet potatoes, peeled and diced
- 1 cup sour cream
- 1 can (10.5 oz) cream of mushroom soup
- 2 cups shredded cheddar cheese (divided)
- 1/2 cup butter, melted
1/2 cup milk - 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup cooked bacon, crumbled
- 1/4 cup chopped green onions (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Boil diced potatoes in salted water until fork-tender, about 10–12 minutes. Drain well.
- In a large bowl, combine sour cream, cream of mushroom soup, melted butter, milk, garlic powder, onion powder, salt, and pepper.
- Stir in cooked potatoes, 1 1/2 cups of cheddar cheese, and half the bacon. Mix gently until evenly coated.
- Transfer mixture into prepared baking dish. Top with remaining cheese and bacon.
- Bake uncovered for 25–30 minutes, until cheese is melted and bubbly.
- Garnish with green onions before serving
