  • Mississippi Mud Potatoes are a rich, cheesy, and creamy potato casserole baked until golden and bubbly. Packed with sour cream, cheese, and bacon, this comfort food dish is perfect as a hearty side for family dinners, potlucks, or holidays.

Ingredients

  • 6 medium russet potatoes, peeled and diced
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups shredded cheddar cheese (divided)
  • 1/2 cup butter, melted
    1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions (optional, for garnish)


Instructions

  • Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  • Boil diced potatoes in salted water until fork-tender, about 10–12 minutes. Drain well.
  • In a large bowl, combine sour cream, cream of mushroom soup, melted butter, milk, garlic powder, onion powder, salt, and pepper.
  • Stir in cooked potatoes, 1 1/2 cups of cheddar cheese, and half the bacon. Mix gently until evenly coated.
  • Transfer mixture into prepared baking dish. Top with remaining cheese and bacon.
  • Bake uncovered for 25–30 minutes, until cheese is melted and bubbly.
  • Garnish with green onions before serving
