Ingredients
- 8 slices thick-cut bread (brioche or challah recommended)
- 8 slices cooked bacon, crispy
- 4 oz cream cheese, softened
- 2 tablespoons maple syrup (plus more for serving)
- 4 large eggs
- 1 cup whole milk (or half-and-half)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 2 tablespoons unsalted butter (for cooking)
- Powdered sugar (optional, for garnish)
Instructions
- In a small bowl, mix softened cream cheese with 2 tablespoons maple syrup until smooth.
- Spread cream cheese mixture on 4 slices of bread. Top each with 2 slices of bacon, then cover with remaining bread slices to form sandwiches.
- In a shallow dish, whisk together eggs, milk, vanilla extract, and cinnamon.
- Dip each stuffed sandwich into the egg mixture, coating both sides well.
- Heat butter in a large skillet over medium heat. Cook stuffed French toast for 3-4 minutes per side, until golden brown and cooked through.
- Serve warm with maple syrup and a dusting of powdered sugar, if desired.
