Description
A comforting slow cooker lemon herb chicken and rice dish made with tender chicken, fluffy rice, fresh lemon, and aromatic herbs for an easy one-pot meal.
Ingredients
- 1 1/2 pounds boneless skinless chicken thighs or breasts
- 1 1/2 cups long-grain white rice, uncooked
- 3 cups chicken broth
- 1 lemon, zested and juiced
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Lightly grease the slow cooker with olive oil.
- Add rice, onion, garlic, oregano, thyme, paprika, salt, and pepper to the slow cooker and stir to combine.
- Pour in the chicken broth, lemon juice, and lemon zest.
- Place chicken on top and drizzle with remaining olive oil.
- Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until chicken is cooked through and rice is tender.
- Remove chicken, shred or slice if desired, then return to the slow cooker.
- Stir gently, garnish with fresh parsley, and serve warm.
Notes
- Do not lift the lid during cooking to ensure the rice cooks evenly.
- For extra flavor, lightly brown the chicken before adding to the slow cooker.
- Add vegetables like carrots or peas during the last hour if desired.
