A comforting slow cooker lemon herb chicken and rice dish made with tender chicken, fluffy rice, fresh lemon, and aromatic herbs for an easy one-pot meal.


Ingredients

  • 1 1/2 pounds boneless skinless chicken thighs or breasts
  • 1 1/2 cups long-grain white rice, uncooked
  • 3 cups chicken broth
  • 1 lemon, zested and juiced
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Lightly grease the slow cooker with olive oil.
  2. Add rice, onion, garlic, oregano, thyme, paprika, salt, and pepper to the slow cooker and stir to combine.
  3. Pour in the chicken broth, lemon juice, and lemon zest.
  4. Place chicken on top and drizzle with remaining olive oil.
  5. Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until chicken is cooked through and rice is tender.
  6. Remove chicken, shred or slice if desired, then return to the slow cooker.
  7. Stir gently, garnish with fresh parsley, and serve warm.

Notes

  • Do not lift the lid during cooking to ensure the rice cooks evenly.
  • For extra flavor, lightly brown the chicken before adding to the slow cooker.
  • Add vegetables like carrots or peas during the last hour if desired.
