Description

Lemon butter lobster risotto is a luxurious, creamy Italian-style dish made with tender lobster meat, rich butter, Parmesan cheese, and bright lemon flavor.


Ingredients

  • 1 1/2 cups Arborio rice
  • 2 lobster tails, cooked and chopped
  • 4 cups seafood or chicken broth, warmed
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 1 small shallot, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat broth in a saucepan and keep warm over low heat.
  2. In a large skillet or saucepan, heat olive oil and 1 tablespoon butter over medium heat.
  3. Add shallot and cook until soft, about 2 minutes.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Stir in Arborio rice and toast for 1–2 minutes.
  6. Pour in white wine and cook until absorbed.
  7. Add warm broth one ladle at a time, stirring constantly, allowing liquid to absorb before adding more.
  8. Continue for 18–20 minutes until rice is creamy and tender.
  9. Stir in remaining butter, Parmesan cheese, lemon zest, lemon juice, salt, and pepper.
  10. Gently fold in lobster meat and cook for 2 minutes until warmed through.
  11. Garnish with parsley and serve immediately.

  • Use freshly cooked lobster for best flavor.
  • Do not overcook lobster to keep it tender.
