Description
Lemon butter lobster risotto is a luxurious, creamy Italian-style dish made with tender lobster meat, rich butter, Parmesan cheese, and bright lemon flavor.
Ingredients
- 1 1/2 cups Arborio rice
- 2 lobster tails, cooked and chopped
- 4 cups seafood or chicken broth, warmed
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1 small shallot, finely chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat broth in a saucepan and keep warm over low heat.
- In a large skillet or saucepan, heat olive oil and 1 tablespoon butter over medium heat.
- Add shallot and cook until soft, about 2 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Stir in Arborio rice and toast for 1–2 minutes.
- Pour in white wine and cook until absorbed.
- Add warm broth one ladle at a time, stirring constantly, allowing liquid to absorb before adding more.
- Continue for 18–20 minutes until rice is creamy and tender.
- Stir in remaining butter, Parmesan cheese, lemon zest, lemon juice, salt, and pepper.
- Gently fold in lobster meat and cook for 2 minutes until warmed through.
- Garnish with parsley and serve immediately.
Notes
- Use freshly cooked lobster for best flavor.
- Do not overcook lobster to keep it tender.
