Description

Lasagna rolls are a creative and fun twist on classic lasagna, featuring pasta sheets rolled with ricotta, spinach, and meat or marinara sauce, baked with melted cheese on top.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach, chopped (optional: sautéed)
  • 2 cups marinara sauce (or meat sauce)
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste
  • Fresh basil or parsley, for garnish


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on parchment paper to prevent sticking.
  3. In a bowl, mix ricotta, 1 cup mozzarella, Parmesan, egg, spinach, Italian seasoning, garlic powder, salt, and pepper until well combined.
  4. Spread about 2 tablespoons of the ricotta mixture evenly over each noodle.
  5. Roll each noodle up tightly and place seam-side down in the prepared baking dish.
  6. Pour marinara sauce over the rolls and sprinkle with extra mozzarella cheese.
  7. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
  8. Garnish with fresh basil or parsley before serving.

Notes

  • You can use ground beef or sausage in the marinara sauce for a heartier version.
  • These rolls can be prepared ahead of time and refrigerated until ready to bake.
  • For a vegetarian version, stick with spinach and marinara sauce only.
  • Freeze unbaked rolls for up to 2 months—just add extra bake time when cooking from frozen.
