Description

These kid-friendly beef enchiladas are a comforting and flavorful Mexican-inspired dish made with seasoned ground beef, tortillas, and a mild enchilada sauce, perfect for family dinners.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (10 oz) can mild red enchilada sauce
  • 1 (4 oz) can diced green chilies (optional, for mild heat)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 8 flour tortillas (8-inch)
  • 2 cups shredded cheddar cheese (or Mexican blend)
  • 1/4 cup fresh cilantro, chopped (optional)
  • 1/2 cup sour cream (for serving)


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook ground beef until browned, about 6–7 minutes. Drain excess fat.
  3. Add onion and garlic to the skillet and cook until softened, about 3 minutes.
  4. Stir in chili powder, cumin, green chilies (if using), and half of the enchilada sauce. Season with salt and pepper.
  5. Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish.
  6. Spoon 2–3 tablespoons of beef mixture onto each tortilla, sprinkle with cheese, roll up, and place seam side down in the baking dish.
  7. Pour remaining enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  8. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
  9. Garnish with cilantro and serve warm with sour cream.

Notes

  • For a milder flavor, skip the green chilies.
  • Use corn tortillas instead of flour for a more traditional version.
