Description

Italian sub roll-ups are a low-carb, grain-free alternative to classic subs, made by rolling Italian deli meats, cheese, and fresh veggies with a tangy dressing.


Ingredients

  • 8 slices provolone cheese
  • 8 slices salami
  • 8 slices pepperoni
  • 8 slices ham or turkey
  • 1 cup shredded lettuce
  • 1/2 cup cherry tomatoes, sliced
  • 1/4 cup sliced banana peppers
  • 2 tablespoons mayonnaise
  • 1 tablespoon red wine vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon black pepper


Instructions

  1. Lay provolone cheese slices flat on a clean surface.
  2. Layer salami, pepperoni, and ham or turkey evenly over each cheese slice.
  3. Add shredded lettuce, tomatoes, and banana peppers.
  4. In a small bowl, whisk together mayonnaise, red wine vinegar, olive oil, Italian seasoning, and black pepper.
  5. Drizzle a small amount of dressing over each stack.
  6. Carefully roll each slice tightly into a roll-up.
  7. Secure with toothpicks if needed.
