Description

Creamy, buttery mashed potatoes made quickly and easily in the Instant Pot. A perfect side dish for holidays or weeknight dinners.


Ingredients

  • 3 lbs Yukon Gold or Russet potatoes, peeled and cut into chunks
  • 4 cups water
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, cubed
  • 3/4 cup warm whole milk (or heavy cream for richer potatoes)
  • 1/2 teaspoon garlic powder (optional)
  • Salt and black pepper to taste
  • Fresh chives or parsley, chopped (for garnish)


Instructions

  1. Place potato chunks, water, and 1 teaspoon salt in the Instant Pot.
  2. Seal lid and set to HIGH pressure for 10 minutes. Once done, quick release the pressure.
  3. Drain the potatoes well and return them to the pot.
  4. Add butter, warm milk, and garlic powder if using. Mash until smooth and creamy.
  5. Season with additional salt and pepper to taste.
  6. Transfer to a serving bowl and garnish with chives or parsley.

Notes

  • For extra creamy mashed potatoes, use a potato ricer instead of a masher.
  • Add roasted garlic for a deeper flavor.
  • Keep mashed potatoes warm in the Instant Pot on the ‘Keep Warm’ setting until ready to serve.
