Ingredients
- 2 cups (250g) all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon sugar
- 1/2 cup (115g) cold unsalted butter, cubed
- 3/4 cup (180ml) buttermilk
- 1 tablespoon honey (plus extra for drizzling)
- 8 slices honey ham
- 2 tablespoons melted butter (for brushing)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
- Add the cold cubed butter and cut it into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Stir in buttermilk and 1 tablespoon honey until just combined. Do not overmix.
- Turn the dough onto a lightly floured surface and gently pat it to about 1-inch thickness. Fold the dough over itself 2–3 times to create layers, then pat down again.
- Cut out biscuits using a round cutter and place them on the prepared baking sheet.
- Bake for 12–15 minutes or until golden brown.
- Warm the honey ham slightly in a skillet or microwave.
- Split the warm biscuits in half, layer with honey ham, and drizzle with additional honey if desired.
- Brush the tops with melted butter and serve warm.
Notes
- For extra flavor, add a slice of cheddar cheese inside each biscuit.
- Store leftovers in an airtight container for up to 2 days and reheat before serving.
