Ingredients

  • 2 cups (250g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup (115g) cold unsalted butter, cubed
  • 3/4 cup (180ml) buttermilk
  • 1 tablespoon honey (plus extra for drizzling)
  • 8 slices honey ham
  • 2 tablespoons melted butter (for brushing)


Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  3. Add the cold cubed butter and cut it into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in buttermilk and 1 tablespoon honey until just combined. Do not overmix.
  5. Turn the dough onto a lightly floured surface and gently pat it to about 1-inch thickness. Fold the dough over itself 2–3 times to create layers, then pat down again.
  6. Cut out biscuits using a round cutter and place them on the prepared baking sheet.
  7. Bake for 12–15 minutes or until golden brown.
  8. Warm the honey ham slightly in a skillet or microwave.
  9. Split the warm biscuits in half, layer with honey ham, and drizzle with additional honey if desired.
  10. Brush the tops with melted butter and serve warm.

Notes

  • For extra flavor, add a slice of cheddar cheese inside each biscuit.
  • Store leftovers in an airtight container for up to 2 days and reheat before serving.
