Ingredients

  • 2 pounds boneless skinless chicken breast, cubed
  • 3 medium zucchini, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Greek yogurt or light cream (optional)


Instructions

  1. Preheat the oven to 190°C (375°F) and lightly grease a baking dish.
  2. In a large bowl, toss chicken and zucchini with olive oil, salt, pepper, garlic powder, onion powder, and Italian seasoning.
  3. Spread the mixture evenly into the prepared baking dish.
  4. Stir Greek yogurt or light cream evenly over the top if using.
  5. Sprinkle mozzarella and Parmesan cheese evenly over the dish.
  6. Bake uncovered for 35–40 minutes until chicken is cooked through and cheese is golden.
