Ingredients
- 2 pounds boneless skinless chicken breast, cubed
- 3 medium zucchini, sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup Greek yogurt or light cream (optional)
Instructions
- Preheat the oven to 190°C (375°F) and lightly grease a baking dish.
- In a large bowl, toss chicken and zucchini with olive oil, salt, pepper, garlic powder, onion powder, and Italian seasoning.
- Spread the mixture evenly into the prepared baking dish.
- Stir Greek yogurt or light cream evenly over the top if using.
- Sprinkle mozzarella and Parmesan cheese evenly over the dish.
- Bake uncovered for 35–40 minutes until chicken is cooked through and cheese is golden.
- Let rest for 5 minutes before serving.
