Ingredients

  • 1 (32 oz) bag frozen tater tots
  • 1 lb breakfast sausage
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 8 large eggs
  • 1 cup milk
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 2 green onions, sliced (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook sausage until browned. Add onion and bell pepper, cooking until softened. Drain excess grease.
  3. In a large bowl, whisk together eggs, milk, garlic powder, paprika, salt, and pepper.
  4. Spread half the tater tots in the prepared dish. Top with sausage mixture and 1 cup of cheese.
  5. Pour egg mixture evenly over the top. Arrange remaining tater tots on top in a single layer.
  6. Bake uncovered for 40–45 minutes, until eggs are set and tater tots are golden brown.
  7. Sprinkle remaining cheese on top, bake an additional 5 minutes until melted.
  8. Garnish with sliced green onions before serving.
