Description

A spooky Halloween pasta salad decorated with mozzarella ‘eyeballs’ and olives, making it a fun and festive dish for parties.


Ingredients

  • 12 oz rotini pasta (or other fun shapes)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1 cup mozzarella balls (bocconcini)
  • 1 cucumber, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Italian dressing (or homemade vinaigrette)
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Optional: fresh parsley for garnish


Instructions

  1. Cook pasta according to package directions until al dente. Drain, rinse with cold water, and set aside.
  2. In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red bell pepper, and red onion.
  3. Add Italian dressing, oregano, salt, and pepper. Toss well to coat.
  4. For the eyeballs: Cut a small slit in each mozzarella ball and insert a slice of black olive to create an ‘eyeball’.
  5. Arrange mozzarella eyeballs on top of the pasta salad.
  6. Chill for at least 30 minutes before serving. Garnish with fresh parsley if desired.

Notes

  • Use food coloring or a dab of ketchup under the olive slice for a ‘bloodshot’ effect.
  • Can be made a day in advance and stored in the refrigerator.
