Description
A spooky Halloween pasta salad decorated with mozzarella ‘eyeballs’ and olives, making it a fun and festive dish for parties.
Ingredients
- 12 oz rotini pasta (or other fun shapes)
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1 cup mozzarella balls (bocconcini)
- 1 cucumber, diced
- 1/2 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup Italian dressing (or homemade vinaigrette)
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Optional: fresh parsley for garnish
Instructions
- Cook pasta according to package directions until al dente. Drain, rinse with cold water, and set aside.
- In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red bell pepper, and red onion.
- Add Italian dressing, oregano, salt, and pepper. Toss well to coat.
- For the eyeballs: Cut a small slit in each mozzarella ball and insert a slice of black olive to create an ‘eyeball’.
- Arrange mozzarella eyeballs on top of the pasta salad.
- Chill for at least 30 minutes before serving. Garnish with fresh parsley if desired.
Notes
- Use food coloring or a dab of ketchup under the olive slice for a ‘bloodshot’ effect.
- Can be made a day in advance and stored in the refrigerator.
- Switch up the veggies based on preference or availability.
