Greek chicken bowls are an easy clean-eating meal prep made with juicy marinated chicken, fresh vegetables, fluffy rice, and creamy tzatziki for a balanced and flavorful dish.
Ingredients
- 1 1/2 pounds boneless skinless chicken breasts
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked brown or white rice
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/3 cup crumbled feta cheese
- 1/2 cup tzatziki sauce
Instructions
- In a bowl, whisk olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
- Add chicken and marinate for at least 20 minutes (up to overnight).
- Heat a skillet or grill pan over medium-high heat.
- Cook chicken for 5–6 minutes per side until golden and cooked through.
- Remove chicken from heat and let rest for 5 minutes, then slice.
- Divide cooked rice evenly among meal prep bowls.
- Top rice with sliced chicken, tomatoes, cucumber, red onion, and feta.
- Drizzle with tzatziki sauce.
- Store covered in the refrigerator for meal prep.
