- 2 oz brie cheese, sliced
- 2 oz goat cheese, crumbled (or cream cheese)
- 1 tbsp fresh basil or thyme leaves (optional, for garnish)
Instructions
- Make the Blueberry Compote: In a small saucepan over medium heat, combine blueberries, honey, and lemon zest. Cook for 5–7 minutes, stirring occasionally, until the berries burst and the mixture thickens slightly. Remove from heat and let cool slightly.
- Assemble the Sandwiches: Butter one side of each bread slice. On the unbuttered sides, spread goat cheese on two slices, then layer with brie slices. Spoon blueberry compote over the cheese, then top with the remaining bread slices, buttered side facing out.
- Grill the Sandwiches: Heat a skillet or griddle over medium heat. Place sandwiches on the pan and cook for 3–4 minutes per side, pressing gently, until the bread is golden brown and the cheese is melted.
- Serve: Remove from the pan and let cool for 1–2 minutes. Slice diagonally and garnish with fresh herbs if desired. Serve immediately for the best texture and flavor.
