Description
Crispy and golden German potato pancakes, known as Reibekuchen, served with applesauce or sour cream.
Ingredients
- 4 large potatoes, peeled and grated
- 1 small onion, grated
- 2 eggs
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
- 1/4 teaspoon nutmeg (optional)
- 1/4 cup vegetable oil for frying
- Applesauce or sour cream for serving
Instructions
- Grate the potatoes and onion, then squeeze out excess moisture using a clean kitchen towel or cheesecloth.
- In a large bowl, combine grated potatoes, grated onion, eggs, flour, salt, pepper, and any optional spices (garlic powder, nutmeg).
- Mix the ingredients until well combined, forming a thick batter.
- Heat vegetable oil in a large skillet over medium heat.
- Once the oil is hot, scoop spoonfuls of the potato mixture into the skillet, flattening them slightly with the back of the spoon to form pancakes.
- Fry the pancakes for about 3-4 minutes per side, or until golden brown and crispy.
- Remove the pancakes from the skillet and drain on paper towels.
- Serve warm with applesauce or sour cream on the side.
Notes
- For extra crispiness, make sure the oil is hot before adding the pancakes to the pan.
- You can make these pancakes ahead of time and reheat them in a hot oven or skillet before serving.
- These pancakes are traditionally served with applesauce or sour cream, but you can also serve them with smoked salmon or other toppings of your choice.
