Description

Crispy and golden German potato pancakes, known as Reibekuchen, served with applesauce or sour cream.


Ingredients

  • 4 large potatoes, peeled and grated
  • 1 small onion, grated
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon nutmeg (optional)
  • 1/4 cup vegetable oil for frying
  • Applesauce or sour cream for serving


Instructions

  1. Grate the potatoes and onion, then squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  2. In a large bowl, combine grated potatoes, grated onion, eggs, flour, salt, pepper, and any optional spices (garlic powder, nutmeg).
  3. Mix the ingredients until well combined, forming a thick batter.
  4. Heat vegetable oil in a large skillet over medium heat.
  5. Once the oil is hot, scoop spoonfuls of the potato mixture into the skillet, flattening them slightly with the back of the spoon to form pancakes.
  6. Fry the pancakes for about 3-4 minutes per side, or until golden brown and crispy.
  7. Remove the pancakes from the skillet and drain on paper towels.
  8. Serve warm with applesauce or sour cream on the side.

Notes

  • For extra crispiness, make sure the oil is hot before adding the pancakes to the pan.
